One of my favorite meals that's packed full of veggies is bibimbap:
Bibimbap (Korean Mixed Rice) «
I usually have cucumbers, bean sprouts, carrots, lettuce, ground beef and an egg in mine, but you can easily swap out the beef for mushrooms instead. You can also add in things like spinach or squash. It's really incredibly delicious.
A lot of korean food is actually really healthy and veggie-heavy. My favorite Korean soup is soondubu which is hearty and rich and spicy, and can contain no meat. I make mine with kimchi, extra soft tofu, garlic, soy sauce, red chili flakes, and a broth made of kelp, mushroom, and anchovies. SUPER yummy.
Is there a particular reason that you're limiting your meals to just veggies? If you cook it right, things like skinless chicken breasts are low calorie and healthy. Also seafood is a great option for eating healthy.
