    So I'm taking a nutrition class, which involves monitoring and changing my diet. So I'm looking to grab a few healthy recipes. While this is not particulary my biggest issue (more has to do with my irregular eating habits, low total calorie amounts and the fact I live off a steady supply of booze and coffee).

    Specifically, I'm looking for some great all-veggie meals and dishes o try and see if I can't start eating a little better. I'm pretty good with fruit and I'm cutting back on some meats. I just feel I need more variety with some veggies so I can kick this awful mentality that they are simply a side dish.

    About the only veggie I don't care for is squash, it just illicits some gag reflex with me, but I'm pretty open for anything else and I won't necessarily shoot down a recipe that calls for squash. I would like to limit salads though. I'm looking for some actual vegan/vegetarian recipes. Thanks for sharing.

    Avocados are technically fruit, but as far as taste goes, they're pretty veggie like. Fantastic with olive oil! Try fried rice. Rice, peas, carrots, onions, garlic, and scrambled eggs! Egg salad sandwiches! Eggs are acceptable, right?

    One of my favorite meals that's packed full of veggies is bibimbap: Bibimbap (Korean Mixed Rice) «

    I usually have cucumbers, bean sprouts, carrots, lettuce, ground beef and an egg in mine, but you can easily swap out the beef for mushrooms instead. You can also add in things like spinach or squash. It's really incredibly delicious.

    A lot of korean food is actually really healthy and veggie-heavy. My favorite Korean soup is soondubu which is hearty and rich and spicy, and can contain no meat. I make mine with kimchi, extra soft tofu, garlic, soy sauce, red chili flakes, and a broth made of kelp, mushroom, and anchovies. SUPER yummy.

    Is there a particular reason that you're limiting your meals to just veggies? If you cook it right, things like skinless chicken breasts are low calorie and healthy. Also seafood is a great option for eating healthy.

    Sometimes I forget you're Korean (cuz I only know you as Miriel the photographing Californian) and then when I realize it I don't realize Korean food is awesome.

    Now I want some Bulgogi. But that's not a vegetarian dish.

    So I'm going to suggest OP eat some Quinoa. The stuff is amazing, low fat, and has protein in it!

    It completely baffles me. I've eaten 'beef' 'chicken' 'fish' and 'shellfish' and it's just tofu
