The word dead has no meaning in a show where resurrection is possible. So of course they will throw that word around because it is true. The question is: is he gone from the present and future storyline? I'd like to see how they dodge their way out of that question. They'd probably just say 'he's dead. dead dead dead dead dead'
8+ seasons is interesting but is the main cast signed on for that long? I'd hate for them to start killing characters for contract purposes rather than story purposes, because they do enough of that already.

It really depends on the content there is left for books 6 and 7. If they are Storm of Swords quality then putting that over 3 seasons will be fine.
If they're Feast for Crows/Dance of Dragons quality we could see the show going too long and having a big dip in quality (which happens to most shows when the higher ups keep asking for more and more seasons)
I firmly believe that Jon Snow is dead but Azor Ahai will rise with his body with a little bit of mixins from (SPOILER)Lady Stoneheart for vengeance upon his family. Makes the most sense to me!
