I love quickly blanching veggies like green beans, sugar snap peas, and broccolini and just eating them plain and simple. Maybe a little dressing of olive oil and sherry vinegar.
Ina Garten's sauteed wild mushrooms is not a vegan dish, but it could easily be adapted to be vegan. Just switch out the butter for a vegan butter substitute. I add in some thyme leaves and it is outrageously good. Like, better than mushroom dishes I've had at fancy restaurants.
Bibimbap is one of my favorite dishes ever, and it can be easy to make vegan. Just take out the egg and the beef. The rest of the components (rice, bean sprouts, spinach, lettuce, cucumber, mushrooms, carrots, and Korean pepper paste) are all vegan friendly.

Pan fried tofu with a soy sauce dressing is super good too.
