you get better rewards the closer to ten minutes it takes. if you beat him in 6 minutes, leave the game alone for 4 minutes on the spoils screen, and then press x

The breakability of FFVIII is indisputably the most over-exaggerated misconception in Final Fantasy fandom. I once put the amount of time it takes to break FFVIII, including both battles and menus, into FFVI and an image of Kefka popped up on the screen and his head exploded, and I was taken to the end credits.

FFVIII is the most fun to exploit, because other FFs are just "run around in a circle until you're Level 99" if you want that kind of power. Honorable mention to FFXII's gambit loops.
