Not to say that this game wasn't great, but, well, they made it better.That is no bad thing at all. Mario Kart 64 is an amazing game. It far outstrips any of the subsequent releases (even the awesome new DS one). But nothing can compare to the original balloon game in Super Mario Kart. I could literally play that every waking minute for the rest of my life and not get bored.
The Introduction of the Blue Shell was by far the worst thing that happened to the series.
The three 'outs'. Wipeout, Burnout and Mario Kart N64 ...out.And not so much the recent Burnouts as the old-school Micro-Machines styled ones. Damn, they were so much fun with friends over. =]
EDIT: Special mention to Road Rash, NFS: Hot Pursuit and (although not so much for the racing aspects...) Destruction Derby.

Diddy Kong Racing was also pretty great. Except for the hovercraft. Screw the hovercraft.
