							I like my steak medium. If you start getting into rare territory, you're basically eating steak tartare which is fine, but it's a different thing entirely from cooked steak. Different taste, different texture. And not necessarily BETTER either. Like how ceviche is a totally different taste and texture from cooked seafood.
