I like the more simplified relaxing ones such as Animal Crossing or whatever. Something that you can mess around in when it comes to the short term while having a lazy goal for the long term.
Planes are fun.
My favorites are resource gathering, city building sims like Age of Empires. Then there's Europa of course, which is more like being an alcoholic than playing a game. (SPOILER)'cause the trout's addictive, that's why

- Finding suitable materials to protect you from the elements.
- Locating a nice, sheltered sleeping area.
- Somehow finding a way to take your yearly bath.
- Deciding which brand of super-strength lager to buy to keep you warm at night.

I like how I've played the vast majority of the games mentioned in this thread. I'm such a sucker for sim games.
When I was a kid, I loved Rollercoaster Tycoon. That was a lot of fun.
