Asking for blue rare in a restaurant is a pain because most cooks either don't know how to cook it that way, or simply refuse and you end up with rare. I've run into a few steakhouses where they get it right before though. If they're so afraid of me getting sick I'll sign whatever waiver they put in front of me, just cook my damn steak properly. Usually I'd send it back if I weren't so damn hungry whenever I go out to eat.
I worked at a restaurant where we couldn't cook a burger under medium. I mean, chop meat and steak are different, though. But still. Stupid legal issues.
Also, most places I go and ask for medium rare, I get medium.
