Honestly, whatever makes the game fun to a person is really all that matters. Maybe it seems stupid to grind to one person but to others it allows for a certain higher level of enjoyment.
I enjoy grinding. I want to make that ultra powerful party. I don't care about challenging myself. For me, I have less fun on FFVI when I don't grind. I just feel more accomplished when I boost those stats and get to level 99.
To each their own though. I'm glad that developers add these sorts of options to RPGs. It allows for a customized gaming experience based on the individual. If you want a challenge, run through the game with no grinding at all. If you want an easier experience, it's available but you have to work at it. The first time I saw an RPG with an easy option, I was a little confused since I thought that was the point of a level system.
