Drownball is also a good one.
There's probably half a dozen things I could name from Midgar alone off the top of my head, mini-games are what made it such a special opening to a special game. It's probably what I miss the most about Final Fantasy, constantly doing different things other than fighting battles and watching cutscenes.
Not Sphere Break, because my mental arithmetic is appalling. Also, not Blitzball, because I can't be asked playing it for the sake of getting some key items.
It's hard to say though. I really liked Chocobo racing. It was very good in VII, and even XIII-2 had a decent run of it, though I found the track to be half-assed (Just a round, looping track...)
I, rather surprisingly, quite liked the Fishing minigame in XII.
I think FFVII had the best variety of quality mini-games... but Futan knows the score.
Blitzball all the way. I didn't even finish FFX because of this damn game!
Triad then chocobo racing.
I hate Blitzball.

Blitzball was really fun. I spent like 10 hours in it when it first got unlocked in FFX.
Chocobo hot and cold was also a favorite of mine, as is Triple Triad. Why doesn't SE put these things in their games anymore?
