Haven't done this in awhile...
Title explains most of this but I'll lay some ground rules. Basically choose five albums you would hope to have if they were going to be the only music you could ever listen to.
No Mix tapes/CD/Playlist
No Compilations with various artists (Example: 80s movie soundtracks with various artist)
No "Best of____" albums
No Live albums
So go!

Tough. Particularly in the case of what album to pick for Waits and Dylan. The prospect depresses me.
I think no matter what I picked I'd grow sick of it very fast. There is no winner here.But, here are some albums that will tide me by while I wait, I suppose.
