Chocobo Hot 'n' Cold. Tetra Master. I also quite enjoyed the Fishing game in XII.
Oh, and that one in VII in which you are randomly handicapped in some fashion. I love stuff like that.

1) It took six posts before Hot N' Cold was mentioned. There should not be that many post's NOT mentioning that game. You people disgust me.
2) Square Enix needs to stop with Card games. They have all sucked. Xenosaga 1 had the greatest card minigame in the history of card mini games. If anything, Square should just shamelessly rip off that.
3) I need at least 3 points in order to justify a numbered list of points.

Hot N' Cold has the best music to jam to while you're digging. Triple Triad is a close second.
TIL that XII has a fishing game. How did I miss that completely in two playthroughs?
Chocobo Hot & Cold is the clear winner for me. There are plenty of others that are great, but few even come close.

Come on. When you find a Chocograph, and you've only got like 5 seconds left on the clock, and your beak isn't very strong. What an adrenaline rush.
