I just steal everything I can from every boss battle, never needed a guide.
From what I remember that aren't any items that you can steal that you can't eventually buy or synthesize down the road. If so the only one might be the Masamune for the main character.
Do not worry too much when it comes to stealing,
when it comes to FFIX stealing, there is no "steal or miss for the rest of the game" situation.
But there are items you should steal to get them earlier on in the game.
If only Zidane was a better thief... takes up to half an hour at times.
Stealing the Masamune from, erm, the Fire Guardian at the start of Memoria is a must,
as if you don't have the items to make it yourself, I "think" it becomes unavailable.
Steal from ALL of the elemental guardians at Memoria. When you reach it.
The equipment you can steal, such as Genji material is more than worth it.

I don't see what the point is in stealing Masamune, by that point in the game shouldn't you already have 2 weapons stronger than it for Zidane
At that point I think you should have Orichalum, Angel Bless, or the Tower. 2 of which should be stronger than it.
The Tower? First time I hear of that one.
