Kayaking doesn't take that much arm strength, unless you plan on kayaking some real distance, like more than 2-3 miles.
You'd be surprised, my muscles are so weak and tiny ;-; It might not take much strength, but I know that doing it over and over is going to wear me out at first. I doubt we'll go more than 2, 3 miles max.

I greatly, greatly dislike water parks. Rather be in the ocean.
