I hate when places do not layer, especially cheese. I WANT smurfING CHEESE IN THE MIDDLE OF IT. NONE OF THIS DRY trout!
Guac is awesome with nachos, as long as it is more than just avocado pulp/puree and they actually add trout to it.

Century 21's nachos are usually made with: salsa, sour cream, jalapenos, olives, cheese, and guac. I love theirs so much that I can't help but devour it all before the movie starts.![]()
Here is the perfect nacho recipe by me and you're welcome. Put them on a plate or a chip serving dish in whatever amount floats your little boats.
Layer like this from top to bottom
Restaurant style white corn tortilla chips
Refried pintos
Seasoned ground beef
Seasoned shredded chicken OR chorizo
Super chunky salsa, but not salsa fresca. That is too much oniony and will cause death and discomfort not necessarily in that order.
Black Beans
Fresh lettuce and tomato
Jalapenos
Mexican style shredded cheese.
The idea here is to make multiple layers of this. Not just a stack of the above and you're done. After you put on that cheese on, you start another layer of chips and continue. Then you put the whole shebang in the oven for a little bit to get that cheese gooey and bubbly. When you bring it out your chips will hopefully still be firm. Top with sour cream and thank me later.

I like my nachos with some kind of chili con carne, cheese and salsa. If it's missing any one of these things it's not proper nachos, although I'll settle for a strongly flavoured minced beef instead of chili con carne. Anything above and beyond those things isn't really needed for me - it just takes away from the glorious flavour. Particularly sour cream and guacamole, which unfortunately I can't stand on nachos (or on anything, for that matter). Jalapenos I find to be a touch too strong, although obviously it depends on the jalapeno. I can eat them, but for me they just take away too much of the flavour of the rest of the meal.
