Granny Smith, just because they are better for baking.
if you're baking them then it has to be a Bramley cored and packed with brown sugar.
If you're just buying them to eat? Granny Smith is a personal favourite though I'll change it up and buy pretty much any apple going, Pink Lady are quite nice a balance of the red and green tastes.
Apple slices and caramel is where it's at.
