Gotta go with classic. Metvan comes second, but I've always felt that stretching a game out with exploration and leveling dilutes the challenge.

Simon's Quest Style (Finding body parts and stuff!)
Vampire Killer Style (Finding Keys and stuff!)

Playstation 2 (Lament of Innocence, Curse of Darkness)
