You can capture one in Creature Create and that particular chocobo was obviously a human before dying and becoming a chocobo.

Oh, I killed a few dozen in the Chocobo Cup. But considering how many times they killed me, I lost all pity for them.

perhaps everything is a fiend, after all pyraflys come off people when they die as well. then again if you consider that their stance on it is that it is the same universe as ff7 then they are simply returning to the lifestream.
