I loved getting Vincent's. I just thought the hidden cove was cool. I also enjoy getting this weapon because of the the cutscene in which Lucrecia(SPOILER) comments on Vincent's really good skin despite his metamorphic tendencies.

Cloud's Ultima Weapon. I just like ramming the airship onto Ultimate Weapon's butt. I can feel like it is enjoying it.
Vincent's, I also love that little special hidden place and the extra story you get!

Ultimate weapons, not Ultima WEAPONs
I think obtaining Yuffie's Conformer was my favourite as I enjoyed the challenge and the atmosphere of the sunken Gelnika.
That and I love exploring dark, wet crevices.
