The one that was good enough to be actually featured on this very site until it was sadly taken down.
I'm pretty partial to that sliding puzzle in the original Final Fantasy, but I guess I'd have to go with Triple Triad.

I hate minigames with the fiery passion of a thousand burning suns BUT I do love a bit of VII Chocobo Racing.
I love Triple Triad enough to farm it in FFXIV. FFVIII version is still best though, because it isn't as limiting.

I'm fresh off an FFX playthrough and I really love Blitzball, despite how simple you can make it by hiring the right people. The Jecht Shot is always a fun animation to watch.
