Possibly Atma Weapon, or maybe the final boss battle despite it being something of an anticlimax. It might not have been very difficult but damned if those tiers of monsters weren't cool. Plus, Dancing Mad.
Atma's weapon and it's bitching theme was a high point.

Dullahan is one of my favorites, because it's the last boss battle you can't be totally tricked out for; you have to win based on strategy, or GTFO.
Spamming the Debilitator until he's weak against Holy before getting sodomized by dual Dragon Claw Sabin isn't much of a strategy. That being said, Presenter is the only fight in the game I have to focus on to properly capitalize on for rewards. Wasting every third turn to cast Scan and all that.

i like him cos i felt accomplished once i beat him with a strategy ( i had no internet and it was my first time playing FF) that strategy may have been simple, just use berserk on him, but he still kicked me down with his ultima. thus forcing me to learn the mechanics of the esper leveling. even better than before.
as a boss hes an idiot who is OP and forced me to restart my save far back from him so..... kill him.
Atma Weapon: "Feeble creatures of flesh...Your time is nigh!"
He eclipses anything you had encountered before him both in terms of design (he looks amazing) and difficulty. He looks truly menacing and imposing and the theme "Battle to the Death" which is heard during his battle for the first time in the game really adds to the effect; but most importantly...he also has the chops to match his looks as he not only has a ton of HP but also a rather impressive repertoire of attacks with which to wreak havoc on your party.
I've always felt the game never reached the same level of climax after you start the World of Ruin as it did with the Floating Continent and the fight with Atma Weapon at the end of the World of Balance. It is quite an iconic and memorable fight set to a fantastic theme that is intense and challenging without being cheap.
I also like how in the soundtrack "Battle to the Death" is followed by "Rest in Peace" (the game over theme)...rather fitting.

I cuss out the majority of bosses I faced too much to really have a favorite. Ultros and I have a rivalry that shall transcend all of time and space, so I guess if I had to choose... him.
So many, really, but I'll have to agree the others that Atma Weapon is a special special fight.
But also all the Ultros fights, though for very different reasons.
