Do you prefer it when characters have last names, like in Final Fantasy VII for example, or games where there aren't any, or some games like Suikoden where some characters have a last name and some don't?
Depends. If they ha e a backstory that is important and includes a family, it would be weird if they didn't have a family name, or at least a patri/matrimonial last name.

I feel like it adds a depth to the character and storytelling to have characters with surnames. But FFVII never bothered to use them in-game, which still disappoints me to this day.
They did try it with FFVIII but if the polls I've seen around here are any indication, nobody seems to have played it.
Since I prefer story driven games, I like my characters to have backgrounds and that included last names.

I think it makes them a little more human and cements family ties much better.
