I was going to pick Sephiroth but you put I & II together which shouldn't be the case cause II was much easier than one. I didn't even have to get special gear or be overly strong to beat him.

Yes, it should be the case because it is one and the same person. Just because you chose Sephiroth it does not mean that you think both battles are equally hard. You can still think one is easier than the other one.

I spent more time at Sephy so I knew the mechanics of the fight very well. I found Phantom the most difficult because you had to fly everywhere.

I remember the first time I fought against him in the arena. First thing that happened? He did a slash seemingly out of nowhere and killed Sora in one hit. I think I was like level 50 or something like that.
