Dancing Mad as well. Close runners-up include the opera, the ending theme, and Terra's theme. However, there are more songs I love from this soundtrack than any other in the series, which probably is part of the reason it's my favourite.
Terra and Dancing Mad are about equal for me.
Although if Distant Worlds counts Dancing Mad takes it by a miiiile.

I've been listening to the Balance and Ruin remix album almost nonstop for the last few weeks.
Over time I've fallen in love with this OST over and over so many times. I know most people would disagree with me, but I believe this was Uematsu's best work, and therefore perhaps the best game OST of all time. Kiss my ass if you think otherwise (but I still love you) and gtfo, this is a FFVI thread, no hating.
I'm partial to Setzer's theme, Relm's theme, Terra's theme, this rendition of Gau's theme, Forever Rachel, The Mines of Narshe, something about this version of The Returners,
The simplistically beautiful guitar work in this version of Kids Run Through the City:
And finally, I'm not a fan of the rock opera thing (or whatever it should be called), but the following songs from the remix album make me want to see all of FFVI made into some kind of rock opera awesomeness.
If you need to be convinced to give the following song a try, here's a quote from the comments and it's so true:
"This sounds like Nobuo Uematsu and Freddie Mercury had a music baby."
And I love the arrangement of Aria de Mezzo Carattere here, but I wish they would have been faithful to the original lyrics.
D'oh, I got distracted and forgot to post my current favorite song. It's grown on me. I wouldn't have had it in even a top-10 list of songs from FFVI ten years ago. It's sneaky and simple in a way but I think it's brilliant and says a lot about the game.
