    X's Bahamut is by far the most stylish.

    Just look at that marvelous colour co-ordination!

    Plus he actually ends up talking to you quite a lot throughout the course of the game, in his human form.

    Not sure if it counts but Bahamut Zero from FF VII is my all time favourite summon I think.

    X's stands out to me the most because of the design, but to be fair I'm only familiar with that and VII. The attacks Tyson mentions are smurfing baller.

    Neo Bahamut from Final Fantasy VII has long been my favorite. Yuna's Bahamut in Final Fantasy X is a distant second.
