I would try and level up your Eevee last, if anything. Because Eevee is so versatile with the various evolutions it can produce, it can slot into any team that might be missing a key element. Vaporeon boasts high HP and a relatively high Sp. Attack, while Jolteon has very high speed. Flareon has high attack but possesses fewer STAB physical moves to capitalize on that stat (it learns many Special moves, annoyingly enough).
Espeon shares the theme of high Sp. Attack and is very versatile with many powerful Special moves to be learned. Umbreon's two highest stats are Sp. Defense and Defense and is very much a defensive, pestering pokemon. Leafeon effectively does Leafeon's role but better, with a high attack stat and with a diverse move-pool. Glaceon possesses both a high Sp. Attack and Defense. Sylveon has High Sp. Attack and Sp. Defense, and because practically all fairy moves are special, this helps it.
I've probably gone too into that. But basically, have the Eeveelution work to its nature, but if you are seriously lacking in a team role, don't be afraid to go astray from that.
I don't think moves are banned.

Just a small warning to those that haven't touched their 3DSes in a while, cause a lot of people have had this problem already today.
You will need to perform a system update before you can use the Internet on your 3DS, so brace yourselves.
Imagine how much more awesome it'll be if you end up winning, though

Snorunt evolves into either Froslass or Glalie. Glalie's base stats are 80 across the board, making it ridiculously balanced. It has a mix of physical and special moves. Froslass is also balanced and has a higher speed base stat and tends to learn more specials.
Having both Fennekin and Vulpix on your team is probably a hindrance as they are both typically special Fire-types. Try to make them as different as possible without stunting their natural growth. Ninetales doesn't have much difference between the attack and Sp. attack stats, so there is an option there. Can't do much against the typing. If you face someone with a water, or rock, or ground pokemon, both of them are in trouble and these are common offensive types.
Aron (Aggron) has a ginormous defense stat and a respectable attack to boot. It can easily become an offensive wall. It is X4 weak to Fighting and Ground though, which is a major chink in the armor. And its Sp. Defense is nothing to write home about either. Shroomish evolves into Breloom and is a perfectly serviceable physical sweeper. It has an unusual typing which can throw off some people, and it can learn many elemental punches giving it some variety. Overall, Breloom can be one to watch, even if it is not an obvious choice.
Finally Beldum evolves into Metagross which has a very healthy base stat total, focusing on Attack and Defense, though the other stats aren't very low by any means (though it may be quite slow). Metagross is very powerful and you cannot really go wrong developing it.
