    You use parmigiana, which is the common name for the sauce, not parmesan, which is the common name for the cheese. This is why you don't let english people name things.

    I have heard of Chicken Parmigiana. I have not heard of Chicken Parmesan. I was merely making an educated guess as to what it consisted of.
