I think it depends on the purpose of the team.

For a team I'd use to fight bosses and challenges and whatnot:

Celes - magic focused
Shadow - Throw focused
Farris - support focused
Orlandu - physical focused

Celes' great magic pool and ability to protect the team while restoring her mana via Runic make her an ideal mage at all stages of the game; Shadow covers stealing, albeit unreliably, as well as brings excellent damage via Throw and Interceptor; Farris has access to Mix and Blue Magic, which makes her an ideal support for the team as she can provide powerful, unique effects the others cannot; and Cid brings TONS of damage and utility to the team via his various blade skills, as well as crazy later game evasion tanking possibilities.

For a dream team to follow for story possibilities:

Bikke
Leila
Farris
Balthier

I have NO idea what their story would be like, but I'll be damned if they don't end up with the One Piece before the end of it.
