Honestly? FFXV's Carbuncle might be my favorite design of him. He went back to his fox like traits and is adorable in the demo.

Going to vote for FF VIII Carbuncle, though XV's Carbuncle is a good second place. All Final Fantasy Carbuncle is good Carbuncle though.

Easily XV, with VIII at a close second as a cutsie/cartoony version (I guess VIII was a lot like the other carbuncles though)
