Actually, with a pre-set deadline, it's best to let it run out even if all night actions have been submitted in order to keep the players from metagaming.
The last thing you want is "Player X was online right before night ended, they must have been sending the kill! Lynch Player X!" and then oops cop gets forced to claim because of the host's actions.
Aside from Bleys I don't think anyone on this forum would actually try to do that.
Not saying it's a bad idea, I just doubt anyone here is going to go to that length to sniff out folks in mafia. Especially since you pointed out yourself it won't really tell you anything.

Also, bleys. We have second accounts for a reason that limit even staff from seeing when someone is online. So unless people are somehow able to see more than even staff, no one should be able to connect who's online to the mafia accounts.
Unless they correctly connect the account to who's playing it and correlate that with the online status of the main account, or work out what times of day given players post most frequently on, or looks at some factor I haven't thought of.
And yes, I know that's unlikely, but sticking with pre-telegraphed deadlines gives zero chance for that type of metagaming to occur, and zero probability is preferable to a small probability.
