Overcommit to a certain set of skills, using weapons that aren't very effective or too rare to always have access to, etc. It's not like old-school D&D or anything, but most FF's with open-ended character progression allow you to easily undo a lot of your mistakes (VII, VIII), or are much more streamlined (X). XII requires a certain degree of planning.
But, all you have to do to undo a mistake is pick up one more license for something more useful. It's not like you get locked out of anything by the open progression. Sure, you can take any path you want, but changing if you find yourself on a poor route is relatively easy.
