I'm sure someone else can describe it better, but here goes. Jobs at first, work like FFIII where you simply pick one up and level it, you can add weapon skills as well since XI borrowed FFII's weapon mechanics and expanded on it a bit. Once you reach, I think it was Lv 15, you could do a mission to obtain a support class. Support classes give you certain skills and traits from the second job but at half the level of the main job. So you could be a Lv. 20 Black Mage and sub a Lv. 10 White Mage. You basically only have access to the skills gained from within those levels.
At first, you only have the starting six classes from FFI, but around lv. 30ish, you could start undertaking missions to unlock advanced jobs like Geomancer, Dragoon, and Blue Mage. Overall, I had fun leveling the jobs to a point, but the game is too long of a grind to keep me invested and I simply lack the tack and patience to deal with all the social aspects of the game, so I reached a dead end pretty quickly.
