Triple Triad: Easy to learn, difficult to master, especially with that damn Random Rule always getting in the way. The first card based mini-game in the series, TT has appeared a few more times throughout the series history and was once even a mini-game on this forum until you broke it. Some love it for it's more advanced rules while other hate them but TT is a game that has a surprising amount of depth to it and it's no surprise no one remembers any of the other sidequests or minigames in VIII when they're too busy collecting cards and challenging the games various masters like the Card Club and the Queen of Cards.

Creature Creator and Fiend Arena: You know what Final Fantasy needs? Pokemon or maybe it was Enix's influence saying FF should do their own take on Dragon Quest Monster. In the Director's cut edition of FFX-2, the game introduced the ability to catch fiends, raise them, use them as party members, and even battle them in the Fiend Arena where you can earn more fiends, including actual people like Tidus and Auron? Well the game adds a whole lot depth to battles and is robust enough to be a standalone title on it's own right.
