There are a couple episodes of Evangelion that I enjoyed, but Japan kind of burned me out on it. You couldn't turn around without seeing something Eva-themed. Even bars and pachinko parlors had Eva stuff.
I just consider a classic anime to be a (usually) older anime that was decently popular, but there are some newer things I'd consider classics because the hype didn't die down when the next big anime came along. I'd consider SAO a classic even though it's relatively newer than most "classic" animes. I don't consider an old anime by itself to be a classic because old doesn't always equal good. I'd probably consider most of the Ghibli movies classics also.
As for my favorites though...that's tougher. I remember Sailor Moon & Digimon being some of the first animes I ever watched, but I think I have fonder memories of stuff like Pokemon (up through gen 3) and Yugioh (the original; GX was garbage and I unfortunately never caught up with 5Ds). I also got super into Naruto so I feel like that deserves a mention.
Without picking a specific show, some of my favorite classic anime memories are stitched together commercials from Toonami. I remember back in the day there would be inspirational or motivational speeches or concepts attached to drum & bass music.
