Majora's Mask. The idea behind it - a time loop and guaranteed destruction at the end - really appeals to me too. Just never got around to it!
All of the MGS games. And Resident Evil. Mass Effect is another big one.
Bioshock. Any. Not played a single second.
Dragon Quest. Same.
For a long time it was Souls, for a long time it was Witchers, I would say Mass Effect is about at the top of the list now.
Perfect Dark
Pretty much every other game that was praised, I've at least played a small amount and just ended up not continuing (Baldur's Gate, for example), but Perfect Dark I've actually never played.
I’ve not played any of the Baldur’s Gate games. Really, most classic PC games I’ve never played probably. I’ve also never played any of the ps1 resident evils. I’m sure there are a lot more, but those are the ones that stick out at the moment.
I've never played a single Blizzard game. PC gaming has never been high on the priority list.
I missed out on a lot of PC darlings like Starcraft, Warcraft, Diablo, Planescape Torment, Grim Fandango, Fallout 2, Baldur's Gate II, Half Life 2, KotOR, and the Deus Ex franchise though I do actually own a few of these.
In console gaming, I've never really delved into GTA series and most Rockstar Studio titles in general. For more modern "classics" I have yet to really play Uncharted (despite owning the first four entries) and the The Last of Us.

Any of the God of War games.
I haven't played anything from the following franchises: Legend of Zelda, The Witcher, Mass Effect, Diablo, Soulsborne, Command & Conquer, Age of Empires, Civilization, Metroid, GTA, RDR, COD, Battlefield, and probably plenty more.
Then there are all the 'iconic' standalone games I haven't touched, but I don't think we have time for that list.
Never had any Nintendo consoles, just a game boy pocket.
I'm mostly sad I never played Mario or Zelda games. I've played a couple on an emulator but it never really felt the same to me, so I never played them for very long.
