You get items that you can trade for useful stuff. Make sure you get Ruby's item before you take on Emerald though. However, the most important thing you get is bragging rights!
Lessee... Defeating Ruby will give you the Desert Ruby, and defeating Emerald will give you the Earth Harp. I can't remember which does which, but if you give these items to the traveler in Kalm, he will give you a Gold Chocobo for one of them, and Master Magic, Master Summon, Master Command for the other one.

You get the gold chocobo for beating Ruby. This is possibly the single most bizarre thing in FFVII, even more so than the plot and Cait Sith.
