Esther, the chocobo manager, is the 'link' that gets you from the Desert Prison, formerly Corel, to the Gold Saucer.
Ester....is correct! Mr. Coates and any number of answers relating to winning a chocobo race would also have been accepted. The town that faded (as Squall pointed out) was Corel, not North Corel, for anyone who was wondering.
