I just say that im going to bed and then sign off or put up my away message.
I dont go on AIM, but I use msn, so I end my conversations with "talk to you later, luv ya, bye *wink*" for best friend, sister and close friends and "Talk to you later, bye *wink*" for other peoples.
If I dont want to talk to the person in the first place I say Go away.
Generally, I say something like "Hey, I gotta go. Adios!"

For extra comedy value rather than saying "I need to go get an ice cream sandwich", talk about yourself in the third person.
