Really? I thought the one after [spoilers]you find him in the cave on the Veldt, where he dreams about leaving his daughter[/spoilers] was his final dream.

It is his final dream as it tells the last part of his story, but it doesn't matter when you see the other ones .
Okay, so I got his first dream in WoR (after I saw his fifth dream and got him from the Colosseum), but it took an assload of tries first (~30). After about 30 more, I still haven't gotten the second dream to occur. I thought the chances were 1 in 4? What's going on here?
It's a one in four chance each time you sleep.
It doesn't mean for every four times you sleep, you are guaranteed to see a dream, it just means there's a 25% chance you'll get one each time, regardless of how many times in a row you haven't seen one.
Yeah, but basic statistics applied in this case says there is less than a 0.01% chance I'd go this many times without succeeding given a 25% chance of success each time. I seriously doubt it's that one in a million case here.

It doesnt. That's part of a false rumor.
All the dreams do is give you a bit of backstory for Shadow. Nothing more.
