I love The Main Theme of FFVII, Aeris` and Tifa's Theme....Suteki Da Ne (orchestra)....Eyes on Me is also pretty good. But that's just themes. There's a whole `nother list of only regular songs that are great.

EDIT: Oh! If forgot Kuja's Theme. Genius.
Probably one of the most stand-out tracks on that OST.

Eyes On Me was the song that drew me into VGM, so it definately takes a place on my list. Melodies of Life (especially the MoL/Eiko's Theme arrangment), Crystal Theme, and Succession of Witches are also very good.
