After you complete the game, you'll have the option. Once you beat it again on the New Game+ optiopn, it should still be there. If you reload a New Game+ save file, and reset it (the soft reset, not by the console [R1+R2+L1+L2+Start+Select, press at the same time]), it should be there as an option.
