I'm on the fence about leaving fielding percentages in or out because it does require us to draft at least some adequate fielders, which is very much a part of the real game.
I've noticed a pattern about how you draft pitchers Del, in that you tend to shy away from starters to begin the season. Once you've seen more or less how a particular pitcher looks, I believe beginning of May is a good gauge, you start to target certain ones. Drafting a good many closers and middle relief can also enhance your ERA to begin the season, I'd imagine.
