the first one I ever loved was Still More Fighting from VII.
the boss theme from VI is kick ass.
the Fight with the Four Fiends from IV rocks ballz.
of course, the boss music is some of the best music in all of the FF games, I really love all of them. These are just the first ones that come to mind.
Also, The Extreme from VIII has some wicked sixteenth notes in it.
