Vincent is not a vampire. He is never referred to as a vampire in the game. I editted a screenshot, and, to make it more believable, imagined I was a Square translator, which is how I produced this literary masterpiece:

"Vincent
"Don't you see? I... I are a vampire..."

*bows*

He does not fit the definition of "vampire." True, there certain things about Vincent that are often associated with vampires; sleeping in a coffin is not something most people do. But I am terrified of garlic, so does that mean I'm a vampire too?
