Shin Megami Tensei: Digital Devil Saga looks interesting. The new Zelda does as well, as does Final Fantasy XII. A decent sequel to Final Fantasy Tactics would be nice, especially played in the real Tactics style.

Also, Neo Geo Battle Collesium. I'm sure the Gamecube and XBox will definetly have it. If it never comes to America I will definetly steal one from a Japanese arcade and swim back to the states using the arcade machine as a raft.
What is Neo Geo Battle Collesium ?
It's a big SNK crossover fighter using characters from KoF, Art of Fighting and Fatal Fury, with a few characters from other SNK games, like Metal Slug, Bubble Bobble, etc. It follows the Art of Fighting Storyline and Ryo has aged to a point where he is now the new Mr. Karate.
Bubble Bobble is a Taito game.
Oh. I seen Bust-A-Move games on Neo Geo arcade machines all the time (starring BB characters), I never knew SNK let third parties make games for the Neo Geo.
I can't wait for Killer 7!
