Splinter Cell: Chaos Theory - The graphics in this game are absolutely amazing. Their facial expressions are amazing as well as the bump-mapping, and anything else.
Legend Of Zelda 2005 - I've seen trailers and the graphics look really awesome.
Doom 3 - I've only heard about how awesome this game looks.
Farcry does look excellent but the detail on everything in half-life 2 added with reflect world makes it look better. The general detail of everything is a lot better.Originally Posted by Yamaneko

Zone of the Enders and especially Zone of the Enders 2: the Second Runner had AMAZING graphics.
Both FF X-2 AND XII have great graphics in the CGI
Resi 4 was very good as well and really shows of the Gamecubes graphics. And Doom 3 which I forgot to mention is probably one finest lookin game ever made
Resident Evil 4, DOA Ultimate are probably my picks for best console graphics... I don't play PC games that much, but Doom 3 had some pretty awesome lighting.

I have to agree with Behold the Void. Z.O.E 2 just looked amazing. It wasnt realistic but it was beautifully stylized.

Metal Gear Solid 3 was detailed to beauty.
Final Fantasy X was also very nicely detailed and colored.
