Cloud for the sheer coolness of it, hopefully with limits and materia. Obi-Wan or Anakin could be sweet as well, as long as they allowed lightsabers to be put away, and also included force abilities.
Thinking about it Wolverine might work well, although I'm generally not a huge fan of his in fighting games.
