I'm going to have to say Tonberry, Odin and Eden. Tonberry because of his great sense of humour. Odin because of his nifty slice in half enemie trick and Eeden because of the incredible amounts of damage capable. But , This might sound wierd, Is there really a Gilgamesh GF? I mean I know hes that guy in ff5 but I didn't know about him in ff8 and i've finished it! And, to do pheonix, do you need to use a pheonix pinion?(I think thats what they're called) Because I don't remember seein him either.

Griever is legened to be drawn from squall's mind by ultimecia or his ring.Ultimecia is rumored by designers of the game to be rinoa from the future if squall was to die, thus she has his ring. torn by insanity and years of greif when ultimecia(rinoa) fights squall she draws greiver from squalls ring, how you might ask well if you scan timiat it says " once a gf turned to a monster by ultimecia."

And... Eden is a mechanical angel? I've always seen it as a ship, like Ark. o_o Actually, I see Eden as a drawing made by a drunk artist XD

Griever of course, he's the only one you can'y obtain.

You can't obtain Tiamat, and he is (was) a GF. And Tiamat is much cooler than Bahamut and Griever, hands down.
