I think FFIX had my favorite beginning. It really just drew me in; the characters were so alive, and it mixed some pretty awesome cinematics with a few humorous scenes and a couple really fun minigames. Plus, I loved how you went from character to character. It was thriling knowing they'd all be meeting up at one point or another, and intriguing to know just how it would happen. I liked the openings of VI and VII, though I don't remember them having a whole lot of impact on me. Except fighting with moogles. That was awesome.
